Easy Citrus Quinoa
Ingredients:
3 Cups cooked quinoa
1 cup dried cranberries
1/2 cucumber, diced
juice and zest from 2 oranges
3 tbsp lime juice
1/2 tbsp sugar
1 tbsp olive oil
salt and pepper
Directions:
Mix together all of the ingredients.
Garnish with cilantro or parsley if desired!
