Beach Food.... mmmm Guac!
Guacamole is great, because you can whip it up in under 5 minutes, it's easy to make, and pretty near everyone likes eating it, so dealing with leftovers is practically a non-issue. It's also super healthy for you, with lots of vitamins, healthy fats, nutrients, etc.
In addition, eating guacamole counts as a serving of vegetables, and kids tend to like it (doesn't seem like healthy food!) so you can con fussy kids into eating vegetables while they think they're only eating junk. Genius!
3 Medium Ripe avocados (They should be slightly squashy when you press them, but not total mush)
1/4-1/2 diced tomato (I like mine tomato-ey, but other people don't!)
1-2 cloves garlic, minced
The Juice from 1/2 lime
1/2 tsp olive oil (Optional, but I add it in to optimize the tomato nutrients!)
a few pinches of dried chili peppers
a dash of salt and pepper.
Slice each avocado in half, and remove the pits. Scoop the avocado into a bowl.
Mash it all up until it's chunky, but mostly mashed.
Add in other ingredients
Serve with chips, or spread on sammiches or wraps, or eat by the spoonful (I don't judge!)
